Brussels Bacon and Beans

Brussels Bacon and Beans

Ingredients

  • 1/2 kilo Brussel sprouts cut in half
  • 250g streaky sulphur free bacon finely sliced
  • 1 can white beans drained and rinsed
  • 1 onion finely chopped
  • 3 cloves garlic finely chopped
  • 1 teaspoon balsamic vinegar
  • 1 teaspoon100% tomato puree
  • 1/4 cup water

Method

1. Preheat over 220'c
2. In a heavy based fry pan place streaky bacon and allow to cook until it has released a bit of fat (if more than about a tablespoon then drain off excess).
3. Remove bacon from pan and add in onion and garlic, fry until translucent
4. add back in bacon, brussels and beans and fry for about 5 mins
drizzle with balsmaic vinegar water and tomato puree mix.
5. Season with pepper
6. place in preheated oven for 45 mins
7. serve with crusty rye bread
